🛒 Ingredients:

(Serves 1)

  • 3/4 cup plain Greek yogurt (2% or 0%)
  • Zest of 1/2 lime
  • 1 tbsp fresh lime juice (Key lime if you have it!)
  • 1–2 tsp monk fruit, stevia, or erythritol (to taste)
  • 1/2 tsp vanilla extract
  • Pinch of salt
  • 1 graham cracker, crushed OR 1 tbsp almond flour mixed with 1/4 tsp melted butter and a sprinkle of sweetener
  • Optional: dollop of whipped cream, extra lime zest, sugar-free white chocolate chips

🥄 Instructions:

  1. Make the filling
In a bowl, mix the Greek yogurt with sweetener, lime zest, lime juice, vanilla, and a pinch of salt until smooth and creamy.
  2. Make the base layer
Crush the graham cracker and sprinkle it into the bottom of a small jar or bowl. Or, for a low-carb crust, mix almond flour with a little butter and sweetener.
  3. Layer it up
Spoon the yogurt mixture over the base layer. Top with a little whipped cream, more lime zest, and (optional) a few sugar-free white chocolate chips.

Chill (optional)
Pop it in the fridge for 15–30 minutes to let the flavors really shine—or dig in right away!
