- 3/4 cup plain Greek yogurt (2% or 0%)
- Zest of 1/2 lime
- 1 tbsp fresh lime juice (Key lime if you have it!)
- 1–2 tsp monk fruit, stevia, or erythritol (to taste)
- 1/2 tsp vanilla extract
- Pinch of salt
- 1 graham cracker, crushed OR 1 tbsp almond flour mixed with 1/4 tsp melted butter and a sprinkle of sweetener
- Optional: dollop of whipped cream, extra lime zest, sugar-free white chocolate chips

- Make the filling
In a bowl, mix the Greek yogurt with sweetener, lime zest, lime juice, vanilla, and a pinch of salt until smooth and creamy. - Make the base layer
Crush the graham cracker and sprinkle it into the bottom of a small jar or bowl. Or, for a low-carb crust, mix almond flour with a little butter and sweetener. - Layer it up
