  • 1/4 cup oat flour 
  • 1/4 tsp baking soda 
  • Pinch of salt 
  • 2 tbsp Greek yogurt (2% or nonfat) 
  • 2 tbsp unsweetened applesauce 
  • 1 tbsp neutral oil (or 1 extra tbsp yogurt if omitting oil) 
  • 2 tbsp brown sugar or brown sugar-style sweetener 
  • 2 tbsp granulated sugar or sweetener 
  • 1/2 tsp vanilla extract 
  • Optional: 1 tbsp quick oats for texture 
  • Optional: 1 tbsp mini chocolate chips or chopped dark chocolate 
  • Optional: 1 tbsp cornstarch or flour for extra chew 

🧑‍🍳 Directions

  1. Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. 
  2. In a mixing bowl, whisk together the powdered peanut butter, oat flour, baking soda, salt, and any optional oats or cornstarch. 
  3. In another bowl, combine Greek yogurt, applesauce, oil, sugars, and vanilla until smooth and creamy. 
  4. Stir the dry ingredients into the wet until a thick dough forms. Fold in chocolate chips if using. 
  5. Scoop the dough onto the prepared baking sheet and flatten slightly (they won’t spread much). 
  6. Bake for 8–10 minutes, or until the edges are firm and the centers still soft. 
  7. Cool for 5 minutes on the pan, then transfer to a rack to finish cooling (they’ll firm up as they cool).
