Garlic Parmesan Low Carb Pita

🧄🧀  “Gar-Par” Low Carb Pita Bread (Baked or Air Fried)

A savory, cheesy twist on homemade pita using a low carb, high protein dough made with wheat gluten, flax, oat fiber, and a touch of olive oil. Air-fried or baked until golden, and brushed with garlic butter + parmesan for the ultimate umami-rich snack.

 

Ingredients (Makes 4–6 pitas):

For the Dough:

  • 1/2 cup vital wheat gluten
  • 2 tbsp flaxseed meal
  • 1 tbsp oat fiber
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 1 tbsp grated parmesan cheese (more for topping)
  • 1/2 tsp garlic powder (optional in dough)
  • 1/3 cup Greek yogurt or blended cottage cheese
  • 1 tbsp olive oil
  • 1 tbsp water (plus more if needed)

For the Gar-Par Topping:

  • 1 tbsp melted butter or olive oil
  • 1/2 tsp garlic powder
  • 2 tbsp finely grated parmesan
  • Optional: 1/4 tsp dried parsley or Italian seasoning

Instructions:

  1. Make the Dough:
    In a medium bowl, whisk together the dry dough ingredients. Stir in yogurt (or cottage cheese), olive oil, and water. Mix until a dough forms. Add more water if needed, a teaspoon at a time.
  2. Knead & Rest:
    Knead for 2–3 minutes until the dough is smooth. Let rest for 5–10 minutes to hydrate.
  3. Shape:
    Divide into 4–6 balls. Roll each out into thin pitas, about 1/8 inch thick.

🔥 To Bake:

  • Preheat oven to 375°F (190°C).
  • Bake on parchment for 7–9 minutes, flipping halfway through.
  • Brush with melted butter/oil and sprinkle with garlic powder + parmesan. Return to oven for 1–2 minutes to melt topping.

🍽️ To Air Fry:

  • Preheat to 350°F (175°C).
  • Air fry for 5–7 minutes, flipping halfway through.
  • After crisping, brush with melted butter/oil and top with garlic powder + parmesan. Air fry 1 more minute to finish.
