1. Cook the Noodle (if using)
Boil your lasagna noodle until tender, then cut into bite-sized squares or strips.
2. Sauté or Roast the Veggies
Lightly steam or roast the sliced eggplant or zucchini until soft and golden. When cooled, pat dry with a paper towel to absorb any excess moisture.
3. Assemble Your Bowl
In a bowl or small baking dish, layer eggplant/zucchini, cooked meat, and lasagna noodle pieces (if using).

4. Top & Heat
Sprinkle mozzarella and parmesan on top.
