🛒 Ingredients:
For 1 serving
- 3/4 cup plain Greek yogurt (2% or 0%)
- 2 tbsp whipped cream cheese (or light cream cheese)
- 1–2 tsp erythritol, monk fruit or stevia (to taste)
- 1/2 tsp lemon zest
- 1/2 tbsp fresh lemon juice
- 1/2 tsp vanilla extract
- Optional: 1 tbsp almond flour or crushed graham crackers for a “crust” layer
- Optional topping: a few blueberries or whipped cream
🥄 Instructions:
- Make it creamy
In a bowl, mix the Greek yogurt and cream cheese until smooth. - Flavor it up
Stir in sweetener, lemon juice, lemon zest, and vanilla extract. Taste and adjust sweetness or tartness to your liking. - Assemble the jar
Spoon into a small jar or bowl. If using, sprinkle almond flour or crushed graham cracker as a bottom or middle layer.
Top & chill
Add optional berries or a dollop of whipped cream. Chill for 10–15 minutes to thicken, or enjoy immediately!
