A savory lean beef base is topped with a creamy mashed potato and cauliflower blend, shredded cheese, and green onions. Optional crispy onions add an irresistible crunch. Serves: 2

Beef Base:

  • 1/2 lb lean ground beef (93% lean or leaner)
  • 1 cup onion, diced
  • 2 cloves garlic, minced
  • 1/2 cup frozen peas and carrots
  • 1/4 cup beef broth or water
  • 1–2 tbsp ketchup (optional, stirred in after reducing liquid)
  • Salt & pepper to taste
  • 1 tsp dried thyme or rosemary (optional)

Mashed Topping:

  • 1 cup mashed potatoes
  • 1 cup cauliflower mash
  • 2 tbsp shredded cheddar cheese (optional)
  • Salt & pepper to taste

Optional Toppings:

  • 2 tbsp sliced green onions or chives
  • 1 tbsp crispy fried onions

🍽️ Instructions

  1. Cook the Beef:
    In a skillet over medium heat, cook the ground beef until browned. Drain any excess fat.
  2. Add Veggies & Seasoning:
    Stir in the diced onion and garlic, cooking until soft. Add peas and carrots, beef broth, herbs, salt, and pepper. Simmer 5–7 minutes until liquid reduces.
  3. Optional Flavor Boost:
    Once the broth has mostly reduced, stir in 1–2 tbsp of ketchup for added richness and depth of flavor.
  4. Make the Mash:
    While the beef cooks, combine mashed potatoes and cauliflower in a bowl. Stir until creamy, adding salt and pepper to taste.
  5. Assemble Your Bowl:
    Divide the beef mixture between two bowls. Top with the mashed potato/cauliflower blend. Sprinkle on cheese if desired.
  6. Finish with Toppings:
    Garnish with green onions and crispy fried onions for texture and flavor.

Meal Prep Tip: Portion into individual containers, refrigerate up to 4 days, or freeze up to 2 months. Reheat with a splash of broth or milk to keep it creamy.

If you’re using crispy onions or fresh toppings like green onions, store those separately and add them after reheating to keep the texture fresh and crunchy!
